Tortini alle carote di Giovanni Pina






-"Zia, usciamo?"-
Dopo un giorno passato con gli occhi incollati al computer mandando curricula, l'unica cosa che vorresti è uno psicologo.
Ma uno bravo.
Uno che magari ne sappia anche di oculistica e che ti faccia tornare gli occhi normali e non incrociati come ti sono venuti, e che poi ti dica che no, non è bene assecondare l'istinto che ti porterebbe a chiamare azienda per azienda giusto per sapere a che punto è la tua candidatura.
Però le ho detto si.
E meno male, perchè l'undicenne in questione ha proposto di andare in libreria, per svagarci un pò (ha il mio stesso concetto di divertimento) e lì ho ritrovato la calma ed il sorriso.
Mi sono divertita a consigliarle libri come Harry Potter (che dice di non voler iniziare, ho chiesto a mia sorella di mandarla via di casa, che non può essere nipote mia), libri della Pitzorno e Roald Dahl e mi è piaciuto leggerle pagine intere e ricordare quando li hanno comprati a me quei libri.
Poi lei si è seduta a leggere un libro ed io mi sono buttata sulla sezione cucina.. ed è lì che ho trovato il libro di Giovanni Pina, pasticcere che non conoscevo ma il cui libro mi ha incantata: descrizioni accurate (anche troppo, con uova, tuorli e albumi in grammi come ogni pasticcere che si rispetti), consigli, spiegazioni sul motivo per cui quell' impasto lievita e quell'altro è croccante.. mi sono innamorata.
Ed è proprio una ricetta proveniente da quel libro che vi propongo oggi, i tortini alle carote! Cerco da tanto l'imitazione delle famose merendine che trovo al super, non ci siamo ancora, ma sono comunque soddisfatta: sono fantasticamente umidi e profumati, proprio come piacciono a me!

Ricetta dei tortini alle carote (tratta dal libro "Dolci : manuale pratico di pasticceria" di Giovanni Pina)

Tuorlo 60 gr
Uova 140 gr
Zucchero 160 gr
Latte in polvere 15 gr
Farina di mandorle 90 gr
Farina 00 W 125 gr
Burro 160
Lievito in polvere 2 gr
Carote 250 gr
Un pò di rhum ( mia aggiunta personale)

Montare insieme le uova, i tuorli e lo zucchero.
Mettere insieme farine e lievito.
Tagliare le carote a fiammifero e bagnarle in un po’ di limone (per non farle annerire)
Scaldare burro a 42 gradi ( se si ha il termometro è molto facile, comunque il libro dice che raggiunge questa temperatura se a toccarlo si brucia ma non si muore, libera interpretazione =))
Aggiungere le polveri ed il rhum alla massa montata e mescolare dal basso verso l’alto per non smontarla.
Poi mettere il burro e solo alla fine le carote.
Mettere nei pirottini e infornare a 225° per 25 minuti, poi abbassare a 220° per altri 15 minuti (nella mia umile esperienza e con il mio stupido forno a gas)

Come dicevo, i tortini sono morbidi ed umidi all'interno e un pò scrocchiarelli per via delle carote e della farina di mandorle che ho lasciato grezza, non troppo fine. Il rhum contribuisce ad abbracciare il tutto con una nota aromatica e profumata.

Then she sat down to read a book and I jumped on the cooking section .. and that's where I found the book of Giovanni Pina, who I didn’t know but whose book enchanted me: accurate descriptions (even too much, with eggs, yolks and whites in grams), tips, explanations on why that dough is rising and that one is crisp .. I fell in love.
And it is a recipe from that book that I propose today, muffin with carrots! I’m seeking a long imitation of the famous snack foods that I find at the super, I’ve not find it yet, but I am still happy because they are fantastically moist and fragrant, just like I love!

Recipe for carrot cupcakes (from the book "
Dolci : manuale pratico di pasticceria" di Giovanni Pina)


60 g yolks
140 gr eggs
160 g sugar
15 g milk powder
90 grams almond flour
125 gr flour 00 W
160 gr butter
2 g Baking powder
 250 g carrots
A bit of rum (my personal addition)

Fit together the eggs, yolks and sugar.
Put together flour and baking powder.
Cut the carrots and bathe them in a little lemon juice (to prevent them from blackening)
Heat butter to 42 degrees (if you have the thermometer is very easy, however the book says that if you touch it and it burns but you don’t die it ready, free interpretation =))
Add dry ingredients and rum and mix from the bottom upwards to avoid disassemble.
Then put the butter and carrots.
Place in baking cases and bake at 225 degrees for 25 minutes, then lower to 220 ° for 15 minutes (in my humble experience and with my stupid gas oven)

As I said, the cakes are soft and moist inside and a little crisp because of the carrots and almond flour that I left rough, not too fine. The rum contributes to embrace it all with an aromatic and fragrant taste.
