Cheesecake fredda


Ok, io mi sento ufficialmente molestata e infastidita da tutto il rosso ed i cuori che sto vedendo in giro e di cui i negozi sono talmente pieni che mi è anche giunto un “il tuo regalo di compleanno non l’ho ancora preso, al centro commerciale non c’era niente che non si riferisse a San Valentino”. Non ho voluto infierire  con le due amiche in questione per vari ed eventuali motivi, tra cui:

1.      Cioè, DUE… qualcosa di vero ci sarà pure
2.       Non mi sembrava il caso di dire “bè, potevi cambiare centro commerciale/ città/nazione (pare che da lei questa festa sia bandita, vuoi che qualcosa di non rosso e per giunta esotico non si trovi???)
3.      Diventare rossa e strillare poteva, erroneamente, far pensare loro che io ai regali ci tengo, e anche tanto
Comunque, dicevo, dal momento che ho deciso di mantenere un certo aplomb, me la prendo con Valentinuccio caro,che è consumista & commerciale. Ho deciso, l'udienza è tolta.
Epperò…..e però certo che se qualcuno quel giorno spuntasse con una rosa rossa alla mia porta, io tutte queste cose.. ecco, bè, converrete con me che non sta bene dirle, ho mantenuto la calma per un regalo rimandato, la perdo per una rosa rossa? Io sono educata.. =P

La torta che vi propongo oggi è così rossa e romanticosa, zuccherina e fondente che se la vorrete usare per ammaliare il vostro Valentino, io non vi giudicherò ;)
La ricetta viene dal blog della nostra Araba preferita ed è stato un regalo bellissimo che mi sono auto-fatta non solo perché io adoro le cheesecake ma anche perché mi ha fatto saltare a piè pari la cottura in forno, cosa che mi spaventa per ora. Pare infatti che la teglia a cerniera vada cotta a bagnomaria, quindi in una teglia più grande colma d’acqua ed ecco, io non mi sento ancora  forte abbastanza per sopportare la mia cheesecake inzuppata  di  liquido che non sia coulis di fragole.. LO SO che Nigella ja fà, ma io purtroppo non sono lei (oddio, “purtroppo” ANCHE NO quando la notte va in frigo a fare saccheggi che mi fanno impallidire =P).

Ricetta tratta dal Blog Arabafelice in cucina, con i miei cambiamenti tra parentesi. (stampo da 24 cm di diametro).
500 gr di formaggio cremoso
70 ml succo di limone
un barattolo di latte consensato da 397 grammi
7 gr di colla di pesce
125 gr biscotti Digestive (io gli integrali Misura, per ottenere una base più scura e dal sapore più grezzo)
60 gr di burro
lamponi e fragole per decorare e per il coulis ( io ho messo roselline e decorazioni di zucchero per decorare e per il coulis ho sostituito la frutta con marmellata di fragole)

Per la panna acida (da "La cucina di marble")
500 ml di panna fresca
un vasetto di yougurt intero non zuccherato
il succo di un limone

Un giorno prima preparate la panna acida mettendo la panna liquida in un contenitore con lo yogurt e il limone. Mescolate e lasciate fuori dal frigo per un giorno. Il risultato sarà un composto leggermente più rappreso e delicatamente acidulo ;)
Per la base ridurre i biscotti in polvere ed unirli al burro fuso. Metterli nella teglia a cerniera e via in frigo fino a quando il ripieno non è pronto.
Mettere in poca acqua la gelatina per dieci minuti.
Mescolare con un cucchiaio di legno il formaggio cremoso con il latte condensato.
Intiepidire il succo di limone con la gelatina e mettere nel composto poco per volta.
Mettere il ripieno nella teglia a cerniera e lasciare tutta una notte in frigo.
Per il coulis: scaldare la marmellata di fragole con del succo di limone (quanto basta perchè diventi più morbida, ma non liquida del tutto!).
Io poi ho ottenuto quei tondi appoggiando un coppapasta sul ripieno, ho messo la marmellata riscaldata all'interno ho lasciato asciugare cinque minuti, poi ho ripetuto l'operazione.

* Riflessioni Zuccherose *
Ho fatto doppia dose di ripieno e ho addirittura quadruplicato le dosi della base perchè volevo fare sia il bordo che la base di biscotti. Nella foto qui sotto penso si noti il bordone bello spesso =)
Nel complesso questa torta migliora coi giorni, nel senso che diventa più fondente e morbida, anche perchè il biscotto si inumidisce e, considerato che si parla di biscotti integrali, non gli guasta perdere un pò di croccantezza. La marmellata con il limone e la panna acida del topping danno quel tocco acidulo che spezza il sapore del formaggio e i biscotti integrali sprigionano un profumo casalingo anche giorni dopo.

Ok, I’m officially annoyed by all the red hearts that I'm seeing around..  shops are so full that I have also told " I haven’t your birthday present, at the arcade there was nothing but  Valentine's Day presents! ".
 I didn’t want to answer to the two friends who told me this for various reasons, including:


1. I mean, TWO ... there must be some truth in it
2. It didn’t seem appropriate to say "well, you could change shopping center / city / country (in her country Valentine’s day is banned)
3. Becoming red and screaming could erroneously suggest to them that I really want gifts

Anyway, since I have decided to maintain a certain aplomb, I blame Valentine, that is too  commercial. That’s it.
And still ..... if someone that day comes with a red rose on my door, I could forget all these things ..If I stayed calm for a deferred gift, can I change with a red rose in front of me? I am soo polite .. = P


The cake that I propose today is so red and romantic, sweet and fondant if you want to use to enchant your Valentine, I won’t judge you ;)
The recipe comes from the blog of our favorite Arab and has been a wonderful gift that I have self-made not only because I love cheesecake, but also because I didn’t have to cook it, which scares me so far. It seems that the baking sheet should be cooked in another full of water, then, I still do not feel strong enough to see my cheesecake soaked in liquid that is not strawberry sauce .. I KNOW that Nigella does it, but unfortunately I’m not her (I don’t want to be her just when the night goes to the fridge to make snacks that make me turn pale = P).


From the Arabafelice Blog with my changes in parenthesis. (Mold of 24 cm in diameter).

500 grams of cream cheese
70 ml lemon juice
a jar of condensed milk from (397 grams)
7 grams of gelatin
125 g Digestive biscuits (I used the wholemeal ones to obtain a darker and rawer taste)
60 g of butter
raspberries and strawberries for decoration and for the sauce (I replaced the fruit with strawberry jam)

For the sour cream (from "The kitchen of marble")
500 ml cream
a jar of whole unsweetened yogurt
the juice of one lemon

A day before, prepare the sour cream by putting the cream in a container of yogurt and lemon. Stir and let out of the fridge for a day. The result is a slightly coagulated and gently sour compound.
For the base mash the biscuits and combine them with melted butter. Put in the baking sheets and away in the refrigerator until the filling is ready.
Now put the gelatin in a little bit of  water for ten minutes.
Stir with a wooden spoon the cream cheese with the condensed milk.
Warm the lemon juice with gelatin and put into the mixture gradually.
Put the filling into the pan and leave in refrigerator overnight.
For the sauce: heat the strawberry jam with the lemon juice (enough that it becomes softer, but not liquid at all!).

I did double dose of stuffing and I even quadrupled doses of the base because I wanted it to be very thick. As you can see in the photo below =)
This cake gets dark and soft, also because the cookie is dampened and lose a bit of crunchiness. The jam with lemon and sour cream topping gives a touch of acid that breaks the flavor of the cheese.
